    Etymologically speaking, the word acetic is derived from the Latin word -acetum which means vinegar. An organic compound whose formula is CH3COOH, acetic acid is a carboxylic acid which consists of a methyl group attached to a carboxyl functional group. Ethanoic acid is its systematic IUPAC name and its chemical formula is written as C2H4O2. 

    Containing 5%-20% ethanoic acid, vinegar is a blend of acetic acid and water. The sour taste and pungent smell are due to the acetic acid’s presence in it.

    Glacial acetic acid is referred to as anhydrous (water-free) acetic acid. Since it is an undiluted solution, it tends to form crystals that appear like ice when placed in temperatures below 16.6oC. It has so many applications such as a protic, polar etc. solvent. When it comes to analytical chemistry, it finds its usage in estimating weakly alkaline substances.

    Physical Properties

    While acetic acid is considered a relatively weak acid, when concentrated it possesses strong corrosive properties that can even burn human skin upon exposure. Apart from that, mentioned below are a few general properties of acetic acid:

    • Ethanoic acid is a colourless liquid which has a pungent smell.
    • Its molar mass is approximately 60.052 g/mol and in liquid form its density is around 1.049 g.cm-3.
    • At Standard Temperature and Pressure (STP), its melting point is 289K whereas its boiling point is 391K.
    • Its carboxyl functional group can cause compound ionisation, which is represented by the reaction: CH3COOH ⇌ CH3COO– + H+.
    • As described by the above reaction, proton release is the main reason behind acetic acid being acidic.
    • Its conjugate base is acetate, represented by CH3COO–.
    • In a solution of water, the acid dissociation constant (pKa) is 4.76.
    • The pH level of 1.0M concentration solution ethanoic acid is 2.4, which means that it does not dissociate.
    • Liquid acetic acid is a protic as well as polar solvent, having a 6.2 dielectric constant.

    Fun Fact: The metabolism of fats and carbohydrates in various animals is due to acetic acid binding to coenzyme A. Generally speaking, the compound is the result of the reaction between carbon monoxide and methanol.

    Chemical Properties

    Mentioned below are the chemical properties of acetic acid:

    •   Its chemical reactions are identical to other carboxylic acids. When exposed to temperatures higher than 440oC, it undergoes decomposition and yields ethenone and water or carbon dioxide and methane.
    •   Ethanoic acid and magnesium reaction leads to the formation of hydrogen gas and magnesium acetate.
    •   Upon exposure to acetic acid, metals like zinc, iron, magnesium etc. experience corrosion. These reactions, in turn, end up forming acetate salts.

    Common Uses

    Let’s have a look at the common uses of this acid across various industries:

    1.       Industrial Uses: It is used in various industrial processes for producing substrates.
    •   More often than not, it’s used as a chemical reagent for producing different chemical compounds such as acetic anhydride, vinyl acetate monomer, ester, vinegar, and other polymeric substances.
    •   Not just that, it is used for the purification of organic compounds as the acid can be easily used as a recrystallisation solvent.
    •       It is used for manufacturing dyes and inks.
    •       It is used in perfume production.
    •       It is used in the manufacturing of rubber and plastic products.
    1.       Food Industry: When it comes to the food industry, this acid is most commonly used in commercial pickling operations, as well as in condiments like mustard, mayonnaise, ketchup etc.
    •   It finds its use in seasoning for various food items such as salads and a lot more.
    •   Vinegar’s reaction with alkaline ingredients such as baking soda produces a gas that helps baked goods puff up more.
    1.       Medical Use: This acid has various uses in the noble medical field as well such as:
    •   It is used as an antiseptic against enterococci, streptococci, pseudomonas, staphylococci etc.
    •   It finds its use in cervical cancer screening as well as treating different types of infections.
    •   It is employed as an agent to destroy cells through lysin (lyse) RBCs before WBCs are examined.
    1.       Household Uses: It is widely used as vinegar. In households, vinegar has multipurpose uses such as cleaning, laundry, cooking, and a lot more.

    Fun Fact: Usually, farmers spray acetic acid on livestock silage so that bacterial as well as fungal growth can be neutralised.
